A Day in the Life of Jeanette - Fresh Spinach Salad

image

I was going to give you a break on recipes for awhile, after all of the ones I shared with you in December, but today I made one I learned on our travels that is healthy and soooooo good.  I absolutely have to share it!

Fresh Spinach Salad

Toss washed, fresh spinach leaves (bite size) with Hellman's (my preference) Honey Dijon salad dressing. Place on salad plate and cover with pieces of fresh apple, dried cranberries (I prefer dried cherries), and pecans. If you prefer, you can toss all together again, but it is delicious either way. I find 1 Tab. of dressing is enough for a salad plate covered with spinach.

That’s “Dried” cherries Nate.  They are kind of hard to find in the dried fruits in the grocery store but well worth it if you do.
