Recipe Assistants-Macaroons

The Recipe Assistants had a request from Mary Beth for a recipe for macaroons like the ones at Wheatfields in Lawrence. She says these are very moist and the perfect macaroon. We agree that these are great and are hoping that one of the following recipes will make a macaroon that is equally yummy!

The following recipe comes from Martha Stewart's Cookies: The Very Best Treats to Bake and to Share.

Coconut Macaroons

Preheat oven to 325. Line a baking sheet with parchment paper.

3/4 c sugar

2 1/2 c unsweetened shredded coconut (If using sweetened coconut, reduce sugar to 1 T.)

2 large egg whites

1 t pure vanilla extract

pinch of salt

In a large bowl, combine sugar, egg whites, vanilla, and salt. Using your hands, mix well, completely combining ingredients. Dampen hands with cold water. Use 1 1/2 T to form mounds; place on prepared baking sheet, spacing about 1 inch apart.

Bake until golden brown, 16-17 minutes, rotating halfway through. Let cool on wire. Cookies can be stored in an airtight container at room temperature up to 3 days.

The second recipe has some different ingredients.

Coconut Macaroons

Heat oven to 300. Line 2 baking sheets with parchment paper or nonstick baking mats.

2 large egg whites

Pinch of salt

1 14 oz can sweetened condensed milk

2 t pure vanilla extract

2 14 oz bags shredded sweetened coconut

In a medium bowl, whish egg whites and salt until frothy, about 2 minutes. Stir in condensed milk and vanilla. Using a rubber spatula, fold in coconut until well combined. Using a teaspoon and your fingers, form macaroons into 1 1/4 inch mounds about 1 inch apart.

Bake until macaroons are golden brown, about 20 minutes. Transfer sheets to a cooling rack; let cool 20 minutes. Store in an airitight container for up to one week.

You should go to this site and see the beautiful pictures of the macaroons that this recipe makes. It uses cake flour, which we think sounds very interesting. In fact, we may try this recipe ourselves.

We are hopeful that one of these recipes makes a macaroon that is as good as the ones you can buy in Lawrence. Mary Beth, if you try one of them, let us know how the cookies turned out. If anyone else has a good recipe for macaroons, please post it here.
