Healthy Recipe of the Week:  Sunshine Chicken Kabobs

It seems kids and adults alike enjoy eating food on a stick.  This recipe is fresh, light, and perfect for your grill.  It's from The Good-to-Go Cookbook:  Take Along Food, Quick Suppers, and Satisfying Snacks for On-the-Go Families by Kathleen Cannata Hanna.  A satifyingly chunky cookbook, Good-to-Go provides a lot of practical tips on preparing and organizing snacks and meals.  It has a little something for everyone: from the family who plans all their meals in advance to people just coming home and throwing something together at the last minute.  The emphasis is on healthy eating with good taste and everyday ingredients.  Each recipe has prep times, cook times and lots of handy tips on making good food in a short amount of time.  I wish it included photos of the recipes but other than that, it's a winner.   Enjoy. 

Sunshine Chicken Kabobs

Ingredients

  • 1/2 cup fresh lemon juice
  • 1/2 cup fresh lime juice
  • 1/2 cup orange juice
  • 1/4 cup honey
  • 1 teaspoon salt
  • 8 boneless, skinless chicken thighs 9about 1 1/2 pounds) cut into 1 1/2-inch cubes
  • 2 green bell peppers, stemmed, seeded, and cut into 2-inch chunks
  • 2 medium onions, cut into quarters
  • 10 (8-inch) metal skewers
  1. Combine the juices, honey, and salt in a medium bowl; whisk well.
  2. Add the chicken to the marinade; coat well.  Refrigerate for 30 minutes.
  3. Prepare a medium-hot fire in a gas or charcoal grill.  Drain the chicken and discard the marinade.
  4. Thread a combination of the chicken, bell peppers, and onions onto each skewer.
  5. Grill, turning occasionally, until the meat is fully cooked and all sides of the chicken pieces are nicely marked by the grill, about 8 minutes.  Serve immediately.

Scarlett's Tips for Success:  Don't have or don't want to use a grill?  Just broil them in your oven instead.  You can also skewer and grill mushrooms, zucchini, marinated artichoke hearts, cocktail tomatoes, and sturdy fruit like apples or pineapple with the chicken.  These come in handy when you find that you have a few more mouths to feed than you anticipated.
